A typical Central Italian cold cut realized with heavy Italian pork from certified breeding farms. In particular we mix the leanest part of the pork and then we add the whole pieces of lard (this is not ground together with the rest) to obtain the characteristic mixture. Then the product is put between two tied wire meshes to get its typical flat shape.
