The “Soracosta Opus Incertum” is a cured meat of the ancient local tradition produced using meat stripes taken from the ribs of the pork that, after the massages with salt and spices, are put together and hand tied to be aged at least for 100 days. All the pigs come from certified organic breeding farms and organic are even all the ingredients use in the recipe. With its irregular shape it can reminds the rolled Pancetta but this product is a little bit more elegant since it comes from a more noble part of the pork.
