The “Skudo” can be considered a slightly smoke “Prosciutto Crudo”. The thighs of heavy Italian pigs are opened, deboned and then they are massaged every two day for a couple of weeks with salt, aromatic herbs, spices and Marsala wine. After this, the product is gently smoked and aged at least for 8 months. The name Skudo (shield) comes from its typical shape. This product stays in the middle between a “Prosciutto Crudo” and “Speck” but thanks to its elegance and delicacy it has a really strong identity.
