The Lingua Bovino Cotta (cooked beef tongue) is a very typical cold cut of the Venetian culture; it can be “Naturale” (Natural, simply salted) or “Salmistrata” (marinated with a mixture of herbs and spices). Both these two types are steamed as the traditional recipe wants. The tongues are available whole or already cut in slices.
