The “Cotto Praga” is realized with selected big fresh pork thighs. Every thigh is deboned and then massaged with a mixture of herbs and spices. After this the cooking and the smoking processes are done following the traditional method (slowly and with real wood). The pasteurisation guarantees the conservation.
