The “Cotto Nero” (Black Ham) is produced with big fresh pork thighs that are deboned and massaged with a herbs and spices mixture. It is left just a small bone in the final part. Then the products are cooked at very high temperature (reason of its particular colour) and finally it is pasteurised to guarantee the preservation.
