The “Capocollo del Cacciatore” is the heart of the Coppa, slightly smoked and aged made using only heavy italian pork from certified organic breeding farms. During the production process with salt, spices, aromatic herbs, Marsala and Docg Prosecco wines (organic ingredients), it is massaged every two days for a couple of weeks. Then it is slightly smoked with the traditional method (beechwood) and it aged at least 30 days. The natural veinings of fat make it soft and gentle and it is perfect to be cut by knife.
